ABOUT US

We only use the highest quality pork, carefully selected from Ibaraki Prefecture's brand pork.
By purchasing whole pigs that are raised freely in the rich natural environment of Ishioka City at the foot of Mount Tsukuba,
In addition to loin and top loin, we also offer rare cuts that can only be obtained in small quantities from one cow.
*The availability of rare cuts varies depending on the stocking situation.

Safe, high-quality locally raised pork is used to make sake, utilizing the sake brewing tradition that Kiuchi Brewery has cultivated for over 200 years.
The chefs carefully prepare the ingredients to bring out their full flavor.

KOUJI

At "Kura + Katsu," we use a generous amount of Daiginjo rice koji made at Kiuchi Sake Brewery to prepare our pork.

The meat is covered in rock salt and rice koji and left to age for over two weeks.
The enzymes contained in the koji break down the proteins, making the rice soft and moist.
The result is meat with concentrated umami flavor.

CUTLET

Tonkatsu is carefully fried in the store after an order is placed.
We use homemade lard for frying.
The thickly cut pork is cooked slowly over a long period of time in low-temperature oil to lock in the juices.

By carefully adjusting the frying time and heat for each cut of meat,
You can enjoy the crispy surface and juicy inside.


SUSTAINABLE

The pork used for the tonkatsu comes from Yasato Distillery, which also distills Hinomaru Whisky.
They are grown on a farm in the Yasato district of Ishioka City, Ibaraki Prefecture, on the eastern foot of Mount Tsukuba.

The rural landscape is dotted with fields and orchards, dotted with a few thatched-roof houses.
The idyllic town of Yasato, which evokes the original scenery of one's hometown, has been selected as one of Japan's 100 Best Villages.

Blessed with fertile soil and a warm environment, Yasato is a thriving region for rice, vegetable, and fruit production, as well as livestock farming.
It is also known for having many producers who are committed to providing safe and secure food.
